Want Meatless Monday inspiration for next week? What about something with an international flair? This Moroccan vegetarian stew recipe from the Whole Foods Market Cookbook (page 264) was one I especially enjoyed. It calls for lentils and mushrooms and would be perfect to use for a vegetarian meal any day of the week.
Meatless Monday Stew with Lentils & Mushrooms
I can’t believe I waited this long to give this a recipe a try, especially since I really enjoy Moroccan cuisine and I’ve had the cookbook for several years now. I found the finished stew very hearty and did not miss the meat at all. One reason is that it called for three types of mushrooms, and shiitake mushrooms have a naturally meaty texture.
The other reason I didn’t miss the meat is because of the lentils, which are high in protein and fiber. Although the recipe doesn’t specify which type of lentils to use, there are more than 13 types, so I went with the black beluga variety, which gives you 24% of your daily protein! My favorite brand of black beluga lentils are made by Timeless Foods.

What goes well with vegetarian stew – especially a recipe that falls under the Moroccan cuisine category? Flatbread of course! I made garlic naan to go with ours.
